Fiesta Chicken with Peppers & Black Beans


INGREDIENTS

  DIRECTIONS

  • 1 Reynolds® Oven Bag, Large Size

  • 2 tablespoons flour

  • 1 can (14.5 oz.) diced tomatoes with chili seasonings

  • 2 teaspoons chopped canned or fresh jalapenos

  • 1/2 teaspoon salt

  • 1 can (15 oz.) black beans, rinsed and drained

  • 6 chicken pieces, skin removed

  • 1 yellow bell pepper, cut in 8 pieces
  PREHEAT oven to 350°F.

SHAKE flour in Reynolds Oven Bag; place in 13x9x2-inch baking pan.


ADD diced tomatoes, chopped jalapenos and salt to oven bag.Squeeze oven bag to blend in flour.Add black beans and chicken to oven bag.Turn oven bag to coat chicken with sauce.Arrange ingredients an even layer in oven bag; top with yellow pepper.


CLOSE oven bag with nylon tie; cut six 1/2-inch slits in top.


BAKE 45 to 50 minutes or until chicken is tender.
