Orange Roughy with Tomatoes


INGREDIENTS

  DIRECTIONS

  • 1 Reynolds® Oven Bag, Large Size

  • 1 tablespoon flour

  • 4 frozen orange roughy fillets (6 oz. each)

  • 1 large tomato, chopped

  • 1/4 cup chopped fresh basil OR 1 teaspoon dried basil

  • 1/4 cup sliced green onion

  • 2 cloves garlic, minced

  • 1/3 cup freshly grated Parmesan cheese
  SHAKE flour in Reynolds Oven Bag; place in 13x9x2-inch microwave-safe baking dish.
ADD frozen orange roughy fillets to oven bag. Sprinkle fish with tomato, basil, green onion and garlic.
CLOSE oven bag with nylon tie; cut six 1/2-inch slits in top.
MICROWAVE on HIGH (100%) power for 13 to 14 minutes or until fish flakes easily with a fork, turning dish halfway through cooking time. Let stand in oven bag 1 minute. Sprinkle with Parmesan cheese and let stand 1 minute longer before serving.
THE REYNOLDS KITCHENS TIPS:

If using fresh orange roughy fillets, microwave of HIGH (100%) power for 5 to 6 minutes.
Use ocean perch, cod, haddock, pollock or red snapper fillets as great substitutes for orange roughy fillets.
